In South Africa, these delicious babies are known as Sosaties. Traditionally made with lamb or mutton, the name is derived from the Indonesian Sate which means skewered meat. It is thought that back in the day, Dutch explorers came to southern Africa, bringing Indonesian slaves and with them, spices such as ginger and recipes such as Sate. South Africans until today, love a good braai, and this recipe is a great dish to make on the barbecue but it’s just as delicious prepared on a grill pan. Chunks of beef marinated in ginger and curry powder skewered with plump dried apricots and sweet and spicy peppadews are delicious served with a North African couscous salad (Africa unite!).
Ingredients (6 servings)
1kg boneless beef
1 thumbsize ginger (grated)
1 yellow onion (roughly sliced)
1/2 cup apricot jam
1/4 cup cold water
1/4 cup (balsamic) vinegar
4 tablespoons currypowder
5 dashes Worchestershire sauce
6 bayleaves
6 garlic cloves (crushed)
12 pearl onions
24 dried apricots
*12 (Bamboo) skewers
Preparation Method
- Soak the bamboo skewers in a tall container or ziploc bag filled with water.
- Making the marinade. In a saucepan, fry off the onions until golden brown. Next, add in the curry powder, bay leaves, vinegar, jam and water. Worchestershire sauce, ginger and garlic. Bring everything to a boil and simmer on a low heat for 4-5 minutes and set aside to cool down.
- Use half of the cooled down marinade, to cover the beef and marinade for atleast 1 hour (preferably at room temperature). Whilst the beef is marinading, soak the apricots in boiling water for 30 minutes, until lovely and plump.
- Prepare the grill if using a barbecue and start skewering the meat. Alternating beef with pearl onion, peppadew and apricot.
- Grill the meat skewers rotating occasionally until you reach the desired doneness of the meat, and make sure to let the skewers rest for about 5-10 minutes covered by foil before eating, to enjoy them at their juiciest! Serve the skewers with couscous or flatbread and the remaining marinade.
