Whether you call them Okro, Okra or Lady Fingers, this green vegetable is mostly known for its unmistakebly slimy texture. Hate it or Love it, Okra is an integral part of many African cuisines primarily used for soups and stews. This recipe however, turns this slimy veggie into a crunchy and chewy, sweet and savory snack guaranteed to be loved by both okra haters and lovers!
Ingredients
1 cup okra sliced
1 can sweetcorn
flour
1 small yellow onion
1 egg
1/4 cup buttermilk (or regular milk with a tablespoon of lemon juice)
salt & pepper to taste
Preparation Method
- Combine the okra, corn, flour, onion, salt and pepper in a bowl. In a seperate bowl mix the egg and milk until well combined. Add the egg and milk into the okra mixture and stir to combine (the batter should be thick and just hold together).
- Heat a non stick frying pan on a medium to high heat with a dash of oil before dropping spoonfuls of the okra batter into the pan. Fry until golden brown on 1 side and flip the fritter. When golden brown on both sides, take out the fritters and place on a wire rack lined with paper towels to drain.
- Sprinkle with salt and serve warm with your favorite sweet chili or hot sauce!
