Gone are the days when plantain was only boiled, roasted or fried. Plantain has been used by many foodies as an experimental ingredient and it almost always turns out right, proving time and time again that plantain is the ultimate bae.
Now, with this recipe by @sugarcane_kitchen, plantain proves once again that it can transform itself into virtually anything, even a really fluffy, yummy pancake.

Step by step guide.
- • 1 large rip plantain, peeled
- • 2 eggs
- • 1 tsp vanilla
- • ¼ tsp baking soda
- • 1/8 tsp salt
- • oil for cooking
Preparation/Method
- Place the plantain, eggs, vanilla, baking soda and salt in your blender. Blend until you have a smooth batter
- Oil pan over medium heat. Once the pan is hot, use 1/4 measuring cup to pour the batter onto the pan.
- Cook until the bottom edges of the pancake are golden brown, then flip the pancakes and cook the other side for 1-2 minutes, or until the pancakes are cooked through.
